- Line your pan with parchment paper, leaving overhang for easy removal.
- In a microwave-safe bowl, combine the peanut butter and honey. Microwave in 30-second bursts, stirring each time, until the mixture is smooth, glossy, and fragrant with a nutty aroma.
- Pour the melted mixture over a large bowl of rolled oats, chocolate chips, and a tiny pinch of salt.
- Stir vigorously with a spatula or wooden spoon, folding until everything is evenly coated, sticky, and glossy—the mixture should be thick and resist falling off the spoon.
- Transfer the mixture into your prepared pan. Use the back of a spatula or a piece of parchment to press down firmly, creating a smooth, even surface and compacting the mixture for that chewy texture.
- Refrigerate the pan for at least 2 hours, or until the mixture is firm and set with a slight bounce when pressed.
- Once set, lift the entire slab out of the pan using the parchment overhang and transfer to a cutting board.
- Slice into bars of your preferred size, revealing a glossy, chewy interior dotted with chocolate chips.
- Enjoy immediately or store in an airtight container at room temperature for up to a week, or freeze for longer storage.
