  • 2 cups rolled oats
  • 1 cup chocolate chips semi-sweet or preferred variety

Method
 

  1. Line your pan with parchment paper, leaving overhang for easy removal.
  2. In a microwave-safe bowl, combine the peanut butter and honey. Microwave in 30-second bursts, stirring each time, until the mixture is smooth, glossy, and fragrant with a nutty aroma.
  3. Pour the melted mixture over a large bowl of rolled oats, chocolate chips, and a tiny pinch of salt.
  4. Stir vigorously with a spatula or wooden spoon, folding until everything is evenly coated, sticky, and glossy—the mixture should be thick and resist falling off the spoon.
  5. Transfer the mixture into your prepared pan. Use the back of a spatula or a piece of parchment to press down firmly, creating a smooth, even surface and compacting the mixture for that chewy texture.
  6. Refrigerate the pan for at least 2 hours, or until the mixture is firm and set with a slight bounce when pressed.
  7. Once set, lift the entire slab out of the pan using the parchment overhang and transfer to a cutting board.
  8. Slice into bars of your preferred size, revealing a glossy, chewy interior dotted with chocolate chips.
  9. Enjoy immediately or store in an airtight container at room temperature for up to a week, or freeze for longer storage.

Notes

For extra flavor, sprinkle flaky sea salt on top before chilling. Feel free to add chopped nuts or dried fruit for variation.
